Viking Vanilla Mango Parfait

Easy and delicious breakfast parfait.

 

Ingredients

 

  • three (3) cups of Viking Vanilla Grass-Fed Icelandic Yogurt

  • two (2) large ripe mangoes, peeled, pitted and cubed

  • six (6) tablespoons of your favorite granola

 

Puree 1 mango and spoon equal amounts into 6 clear cups. Top each with ¼ cup of Viking Vanilla.

 

Spoon cubed mango over the top, saving a few pieces for garnish. Top each with another ¼ cup of Viking Vanilla and reserved mango. (Recipe may be made ahead at this point. Cover and refrigerate until ready to serve.)

 

Top each serving with a tablespoon of your favorite granola just before serving.
